I think it’s a good sign when something was so good I couldn’t wait to make it again! That’s how it was with the steak tacos I posted about earlier. I’d mentioned them to my sister who told me she’d made them and loved them. She added a bit of brown sugar to the steak rub, which sounds delicious. Hearing how much she’d enjoyed them all week for lunch made me want them again.
But last night I started with leftover flank steak I had grilled for Mother’s Day. I sliced it very thinly into strips and sprinkled with some chipotle pepper while I cooked an onion and half a red pepper up in the skillet, then mixed up the lime mayo. When they were done, I wiped out the pan and heated up the corn tortillas, just adding the meat after flipping them once so the meat would get warmed but not actually cooked.
I skipped the salsa and avocado last night, just adding some cheese to the steak and onion and peppers. This is a great way to use up leftover steak without feeling like you’re eating leftovers!
