Hey, whomever is still out there reading. I’m going to start to post again I think. It’s been a few years, to say the least.
Life has changed. My “girls” are both women, both married, one with a baby. One has moved away, one is still close. We all still talk about food and share recipes. And I have my eldest, my son-in-law and my grandson here for dinner once a week. Feeding babies has changed! He’s 8 months and last week was here gnawing on a chicken drumstick!
My youngest and her husband will be up here for Christmas which we are all looking forward to! And she will be helping to cook the Christmas dinner!
Most nights I am cooking for myself. Weekends I’m usually cooking for my boyfriend as well.
My youngest and I were texting about Christmas and she remembered the year I made beef tenderloin. It was fun to be able to look that up here and that made me want to start blogging again! So here I am!
Cooking for One
So tonight it was just me and my boyfriend’s neighbor had given us some Russet potatoes to share. So I baked a potato, halved it, broke up the insides with a fork, mixing it up with some butter. While it was baking I had cooked some bacon and caramelized some onions. I broiled the potato halves with Cheddar cheese, then added the bacon, caramelized onions, sliced green onions, and some sour cream. So good!
