Shrimp with Butter and Garlic

These shrimp in butter and garlic from Alison Roman's Dining In are delicious. Serve with good bread to mop up the sauce!


  • 1/2 cup butter
  • 2 Tablespoons olive oil
  • 8 cloves of garlic. sliced thinly
  • salt and pepper
  • 1 Tablespoon tomato paste
  • 1 teaspoon crushed red pepper (or 4 chiles de arbol crushed)
  • 1 1/4 pounds medium shrimp
  • 2 Tablespoons water
  • 1 cup chopped fresh parsley (or basil or cilantro)
  • 1 lemon, halved halved


  • Heat the butter and oil in a skillet large enough to hold the shrimp in a single layer over medium-high heat. When the butter has melted add the garlic and some salt and pepper. Cooking, stirring, just until the garlic starts to soften and sizzle.
  • Add the tomato paste and red pepper and cook another two minutes, stirring.
  • Add the shrimp and 2 Tablespoons water and a bit more salt and pepper. Cook, stirring, until the shrimp are bright pink and cooked through, 5 minutes or less (especially if shelled).
  • Remove from the heat, add the chopped herbs and squeeze lemon juice over it all.
