These shrimp in butter and garlic from Alison Roman's Dining In are delicious. Serve with good bread to mop up the sauce!
Ingredients
1/2cupbutter
2Tablespoonsolive oil
8clovesof garlic. sliced thinly
salt and pepper
1Tablespoontomato paste
1teaspooncrushed red pepper (or 4 chiles de arbol crushed)
1 1/4poundsmedium shrimp
2Tablespoonswater
1cupchopped fresh parsley (or basil or cilantro)
1lemon, halvedhalved
Instructions
Heat the butter and oil in a skillet large enough to hold the shrimp in a single layer over medium-high heat. When the butter has melted add the garlic and some salt and pepper. Cooking, stirring, just until the garlic starts to soften and sizzle.
Add the tomato paste and red pepper and cook another two minutes, stirring.
Add the shrimp and 2 Tablespoons water and a bit more salt and pepper. Cook, stirring, until the shrimp are bright pink and cooked through, 5 minutes or less (especially if shelled).
Remove from the heat, add the chopped herbs and squeeze lemon juice over it all.
