Red beans and coconut milk add an islandy flavor to this rice.
Ingredients
1cuprice
1 15ozcan red kidney beans, drained and rinsed
1 15ozcan unsweetened coconut milk
1cupwater - or perhaps a bit more
salt and pepper to taste
Instructions
Put the beans, coconut milk, water, and beans in a saucepan and bring to a simmer. Turn down and cover and cook for 20 minutes, until the rice is done. You may need to add a bit more water.
