I had bought a tray pack of ground turkey at Costco the other day. The first pack we had friends over for dinner and made Turkey Burgers, sweet potato fries, and coleslaw. Tonight I weighed out a pound and froze the extra (about half a pound) from one tray pack and made Cheeseburger Soup. This is a recipe I got from a frugal newsgroup a long time ago. (Thank you Rhonda!) The original recipe called for a can of cream of mushroom soup but I usually just make a white sauce for that. I often use Cheddar cheese instead of the original American cheese or Velveeta. Tonight, rather than using grated cheese I used up the leftover Welsh Rarebit from the other night. It came out great! I also left out the sour cream because I didn’t have any.
I also took a few leftover hamburger buns from last night and made some garlic toast. I spread butter on the buns, sprinkled a bit of garlic powder on, then grated some Parmesan cheese. I put those under the broiler a few minutes and we had good “cheater” garlic bread. Usually, I mix softened butter with minced garlic but was lazy tonight.
I love using up leftovers in a new way and using the Welsh Rabbit in this soup was inspired, I think. 😉 I’ll have to plan it out next time! Tonight I just happened to see the leftover container in the frig as I reached for the cheese.
