My sister Andrea recently shared her favorite chicken marinade and it is tied with my favorite Worcestershire and Soy Sauce Marinade now. This one has mustard in it, but you don’t really taste the mustard per se. It just tastes incredibly good and the chicken always seems very moist.
I have always grilled the chicken I’ve marinated with this. I heat the grill on high, clean it off, oil it if I think of it, turn down the heat and then cook the chicken. I’ve only done chicken breasts with this so far but I’ve done both boneless, skinless and bone-in breasts.
Andrea's Chicken Marinade
Ingredients
- 1/2 cup dry white wine
- 2/3 cup canola oil
- 1/3 cup wine vinegar
- 1/4 cup spicy brown mustard
- 2 tablespoons finely chopped onion
- 2 teaspoons salt
- 1 teaspoon thyme
- 2 cloves garlic minced
Instructions
- Mix this all up and marinate your chicken a few hours or overnight.
- It's enough to marinate one whole chicken or a selection of your favorite parts.
Any leftover chicken is great on salads, in soups, in tacos or burritos, or made into chicken salad.
