Shopping at Costco when you’re hungry and have a veg and fruit loving daughter with you can be dangerous! We have lots of produce to eat up. When I made the beef spiedini the other night, I also made a large salad with spinach, avocado, mango and red onion. We completely polished it off and it was so good my daughter asked me to make it again last night to go with our grilled salmon. Now the spinach is all gone, at least.
The dressing was super simple: olive oil and rice vinegar. I don’t even measure it. I just make the salad as big as I want, dress it with a light coating of olive oil and toss well, then pouring on some rice vinegar, tossing and tasting as I go. Oh and salt and pepper too, of course. I’ve loved rice vinegar on spinach salads for many years, often omitting the oil and just using the vinegar it’s so mild. Seasoned rice vinegar is good, too.
I just found a new way to cut up an avocado, too. I have several more perfectly ripe ones to practice on.
