This is the fastest way yet I’ve found to shred beef for enchiladas, tacos and so forth. I had some leftover pot roast and decided to make beef enchiladas. Usually I would use two forks to pull the beef apart into shreds or I would get lazy and just chop it up. But I do think it tastes better when it’s shredded so I like to do that if I have time. I remembered reading that you could use your stand mixer to shred meat so I thought I’d try it.

So easy and fast! This, by the way, is my KitchenAid mixer that is about 20 years old and still going strong!
I mixed up some enchiladas sauce, chopped some onions, and grated some cheese. I like to heat the tortillas in the microwave to make them soft for assembling enchiladas.
