This quick marinated cucumber salad is one of my favorite summertime side dishes. It keeps a few days in the fridge… not sure how long because I usually eat it up within 4 or 5 days. You can make this the day you’re serving it if you can allow a couple of hours for everything to sit in the fridge marinating a bit.
I always use onions and cucumbers. I usually add chopped red or green pepper but if I don’t have any that won’t stop me from making this! If you want it to look extra pretty, peel the cucumbers leaving a thin strip of peel between points so each slice has a slight bit of peel on it. I like to use red onion in this for the color but would use white or yellow if I didn’t have red.
Quick Marinated Cucumber Salad
Ingredients
- 1 cup water
- 1/4 cup vinegar
- 2 tsp salt
- 3 Tbs sugar
- 2-3 cucumbers peeled and thinly sliced
- 1/2 cup green or red peppers chopped (optional)
- 1/2 cup sliced onions
Instructions
- Combine the water, vinegar, salt and sugar in a bowl and stir to dissolve.
- Add the vegetables and stir again, then let sit in the refrigerator an hour or two before serving. You can also make this a day ahead as it tastes great with a longer marinating time.
